So, after staring at this forever, I no longer have any faith that I can repair it on my own. I went through the menu tutorial twice (IG tutorial XI) and still no luck. Once, I managed to see the menu items visible on-screen, but couldn't select them (that was the first attempt). Now they aren't visible at all. It's not the font I have chosen because in my testing, that worked just fine for the Pause screen.
Essentially, my Stage Selection screen won't show it's stage selection options, and as such, they are not accessible.
Seems that, so far, for every success I have with IG Maker, I encounter some crushing defeat that I spend a ridiculous number of hours staring at with no success. I'm also not grasping the Menu layout screen which seems intent only on showing me a blank blue grid. I'm missing something here, so any help would be appreciated.

This one took me a minute, but I found your problem and it's a simple fix.
Open up your file, go to the "Menus" tab and the "Menus" sub-tab. Pull up the "Parts Placed On The Layout" details window, and go to the "Items" tab there. For both of your stages, under "Special Usage" you have the box checked for "Display Cursor Selection". That's what is making your text invisible. Un-check that box on each of your items and you're good to go.

Ahh thanks. That "Display Cursor Selection" box is a little misleading. I thought it was required to "display" the items the cursor would select.
