I'm a pretty healthy eater. I don't fry my food. And, this definitely isn't an authentic recipe. So I call it "General Faux's" chicken.
I got lazy and dumped it in the crock pot for six hours. How lazy? It gets so tender that your new mantra will be "what the Heck is chewing?!"
For 2lbs of boneless skinless chicken breast, you'll need a marinade of.
4 TBSP Light Soy Sauce
2 TBSP Rice Wine Vinegar
2 TBSP Chili Paste
2 TBSP Tomato Paste
2 TSP Sesame Oil
2 TBSP Minced Ginger
4 cloves of garlic
Juice of 1 fresh orange
Wisk all that together. Marinade for a few hours to over night.
Add
- 6 red chilies (if you're me and love spice, have at it and add more)
- Zest some of that orange in.
- Also, I don't know if it's sacrilege or anything but I wanted more vegetables so I added half an onion and a couple carrots.
- 2 TSP corn starch. Check to see if it's thickened up after a few hours. If not, use a little more.
Chuck it all in the crock pot 6 hours before dinner is needed.
Serve with brown rice and broccoli!
