No recipe this time as it was my first time making it since I developed the recipe in my head...  if and when I make it again I'll put a recipe. :)

Yep!    It didn't really hold together like a traditional lasagna, but the taste was still amazing... And it's higher in protein because Quinoa is higher in protein!

I ate an icecream recently. Problem is, it's was Flake Icecream but didn't have a flake in it. I think it was a manufacturing issue!

And it's a complete protein! I'd be more partial to calling it a casserole, but it sounds good any way. I should do something like this with my homemade pasta sauce come summertime. We must be on the same brain wave because I made a chicken noodle soup where I used quinoa instead of egg noodles. I'll have to write up for it later when I get a picture where all the quinoa hasn't sunk to the bottom of the bowl.

It's a great idea - I'm all about making things like that. As long as it's got the flavors. I've done a dish with taco meat and bell peppers and some other things mixed with quinoa. It was really good. I might have to give the lasagna a try sometime.

Bit too out of it to write a full recipe with directions, but I'll give the play by play. 


As always, most of my cooking is inspired by rather than the actual thing. This is a chili verde of sorts. I've used white beans and quinoa for grains and instead of the typical pork it would be cooked with I used ground turkey to keep it leaner. 




  • Soaked half a bag of Great Northern beans the night before, cooked them up, and set aside. Approximate to two cans, but dude, dry beans are so cheap.
  • Cooked up the ground turkey, set it aside.
  • Cooked up quinoa, set it aside.
  • Tossed the oven on 400F and roasted some tomatillos, green chilies, pablanos, and jalapenos. 15 minutes on each side.
  • In a large pan I heated some olive oil, cooked down some onion and garlic. Added a little flour to make a roux, kept it on the blonde side.
  • Hit it with some white wine.
  • Used oregano, salt, black pepper, coriander, and cumin as spices.
  • Added a container of chicken stock (I use no sodium added).
  • Simmered and stirred for 15 minutes to let it thicken up.
  • Took my vegetables out of the oven, set up the food processor, and blitzed the Hell out of them. Added a bit of fresh cilantro, a couple stalks of green onion, a splash of raw apple vinegar, salt, and blitzed it again.
  • Added it to my stock.
  • Added my beans, turkey, and quinoa.
  • Brought it to a simmer, left it for an hour.
  • Squeezed a fresh lime, gave a stir, and ready!

I could write down something more concrete for you if you'd find it helpful.  I try to legitimately write down my recipes but over half the time I mostly just toss stuff into pots and hope for the best.

Every single one of them is a speciality of an italian region. The ones that are on focus in this picture are called "Sfogliatelle" and are the speciality of my region (Campania).


Yes, there is Nutella inside the one in the center (and cream in the others, depends about your choice).


Yes, there is cream and sugar on top (or just one of the two).


Yes, they all taste as amazing as they look.

Yes, as you can see there's coffee cream too on that specific pastry. Also the bottom of it is made with a sort of cookie (which has the shape of a small cup) all covered by chocolate.

Thanks! It takes a bit of time to prepare it like that but the result is worth it, it has a wonderful taste.


I admit that I never tried Soybean Paste before (I think we don't even have it here honestly) so I'm pretty ignorant regarding this, lol.

Here's something I prepared today.




This is spaghettini (thin spaghetti) with butter, tuna and pepper, you can also add parsley but I personally don't like the taste with it, that's why I didn't add it in the picture. This dish is very tasty and also easy to prepare.


Here's what you need to prepare it:


1 - Spaghettini (pasta)


2 - Canned Tuna in Olive Oil (around 160g for 1-2 people)


3 - Butter (30-40 g)


4 - Extra Virgin Olive Oil


5 - Salt


6 - Pepper


7 - Parsley (optional)


How to prepare it:


1 - Drain the tuna oil and put the tuna itself in a bowl using a fork (or a spoon, whatever works). 


I do this all the time because it's usually low quality oil added just to give taste to the tuna, I want to add my own better oil.


2 - Wash the parsley and cut it in small pieces, pulling the leaves from the twigs of course, then put it aside for a while.


^ If you are not using Parsley then skip this part.


3 - Start boiling the pasta in salt water and while it's starting to boil take 30g of butter, cut it and put it in a pan.


4 - Add the Extra Virgin Olive Oil in the pan and heat on low heat untill the butter will melt, at that point add the tuna and mix well everything for a couple of minutes (to add flavour).


5 - Drain the spaghettini and then put them in the pan, continue mixing everything to add the tuna-butter flavour to them for a couple of minutes. (Do it if the pasta is ready, if not then turn off the burner under the pan and wait for it to be ready, then turn on the burner again)


6 - After a couple of minutes, turn off the burner, add pepper to the spaghetti and add parsley too (if you deicided to use it), mix everything one last time and you are done!


Et voilà, Bon Appétit~
