Changing all text/font color to white or a different color

Hello, so im making a Gameboy style game with green and black colors but my font right now is black and it blends in far too much, I just would like an easy way to change the color of the font so you can actually read it.

You can use an image editor to edit the color swatches in your windowskin file (window.png in the system images directory of your project) to change the relevant swatch colors. That's generally the method intended by the engine.

Alternatively, you'd need a plugin to override individual colors. But based on your description, editing the windowskin is probably the way to go. You could probably google for additional guides/information.
