After further investigation, I noticed this function in the file rpg_windows.js (located in the "plugins" folder of the project) :

Code:
Window_Base.prototype.systemColor = function() {
    return this.textColor(16);
};
It seems that changing the value of the text color will change the color of the LV, HP, MP, TP, but also the gold, the parameters like "ATK, DEF, MDEF...". In short, all the text that has been labeled "system colored" will change.

If you want to only change the color of the parameters, I suggest you to take a look at rpg_windows.js and change them manually.

for example

Code:
Window_Base.prototype.drawActorHp = function(actor, x, y, width) {
    width = width || 186;
    var color1 = this.hpGaugeColor1();
    var color2 = this.hpGaugeColor2();
    this.drawGauge(x, y, width, actor.hpRate(), color1, color2);
    this.changeTextColor(this.systemColor());
    this.drawText(TextManager.hpA, x, y, 44);
    this.drawCurrentAndMax(actor.hp, actor.mhp, x, y, width,
                           this.hpColor(actor), this.normalColor());
};
You can see wherethe text color is applied and it's not hard to figure out how to edit the line ^^
