Grayscale Technique

Well, im actually struggling to change my coloring style and i found that grayscale coloring really interesting. It simple yet powerful. So i wanna ask if there is anyone who has quite good experience with this tech, can you please share with me? Even giving tutorial would be SUPER helpful!
