I'm not a good mapper, but I've been using various tutorials so far and have made (what I'd like to say) somewhat good maps. However, after a lot of searching, I can't find a tutorial for mapping a mine. It's man-made, does that mean the walls are all square or is there still some element of randomness? I get that there will be tracks, but should they go everywhere or only on the main ways? Can anyone guide me in the right direction or maybe show me a tutorial I may have missed? Any help is greatly appreciated.

You can always post your maps on the Game & Map Screenshots topic. You can ask for a detailed critique of your work there.

What I can tell you is to try to create a narrative that will be presented in your maps.
For example, we can say that it's very reasonable for the first maps of your mine to be more open, squared and filled with man-made objects, while the deeper maps would be narrower, darker, less defiled by humans and filled with more random nature elements, like rocks, gems, stalagmites, etc.

That is the simplest form of a narrative. Try to create your own and then apply it.

This forum is for discussing the principles of game making.  As suggested by KanaX, your best bet is to post examples in the Game and Map Screenshots thread for detailed feedback.

Couple hours of work. Might use in my game as a secret find or something. Not sure. Fancy though no? :D
Holy stink, where have I been? Well, I started my temporary job this week. So less time to spend on game design... :(
Cartoonier cloud cover that better fits the art style, as well as (slightly) improved blending/fading... fading clouds when there are larger patterns is still somewhat abrupt for some reason.
Do you Find Tilesetting or Looking for Tilesets/Plugins more fun? Personally I like making my tileset for my Game (Cretaceous Park TM) xD
