I'm about to publish a game on Itch. How would i protect the assests and publish it safely? I don't want people to steal assets from it because they are from a paid pack.

Normally, the default encryption is enough to comply. If you want to take another step further, find a custom encryption around the internet or learn how to make your own.

Take note though that you can't 100% protect it.

Depends on where you wanna upload it and how you want players to get it, if as downloadable files, then you could zip up the whole deployed game folder and upload that zip file or make an installer for it and upload the installer. If you want it playable on Itch's web player, I cant help with that as I have no experience in that field.

rmmv run on nwjs engine, and nwjs have a tool named v8Snapshot.
This tool can be run from your terminal cmd in your local projet to cripto your source game in .bin 'binary file'
Than just add a code in your main file for when run game, the bin will be decompress in memory.
You can use also other compress image tool or native zip tool from nwjs to zip your image and audio. Or also the rmmv image encoder and decoder.
The guide is here.
http://docs.nwjs.io/en/latest/For Users/Advanced/Protect JavaScript Source Code/

Those thing no affect performance but only the time for boot game.

Just beat the last of us 2 last night and starting jedi: fallen order right now, both use unreal engine & when I say i knew 80% of jedi's buttons right away because they were the same buttons as TLOU2 its ridiculous, even the same narrow hallway crawl and barely-made-it jump they do. Unreal Engine is just big budget RPG Maker the way they make games nearly identical at its core lol.
