looking for alternatives for 0 damage output.

Hello.
Due to high defence i have attacks that deal 0 damage.
While that is fine and all i was wondering if i could replace a 0 damage outcome with some text saying it got blocked, parried or just misses.

you would have to use a plugin for that.
and unless you're already using plugins to modify the damage sequence, that would be better done by a small custom plugin.
if you are using plugins that change the damage sequence, you would have to tell us which ones to see if any could do this or if you would need a modification to one of your plugins.

it would be possible in the dmg formula as well, or MrTrivel minimum dmg
and set it to 1 as minimum dmg.

misses, blocked, parry is also possible, but it require a plugin,
while it's not big, there exist some of them already for use.

Don't forget that if the player sees "miss", "block" or "parry", they will think they got unlucky and keep trying the same attack. Seeing zero damage is much more informative, as the player immediately knows not to try that attack on that enemy any more.

I agree with Aoi. You can certainly do whatever you like in your game, but from the perspective of a player, there should be a difference between an attack that misses completely and an attack that hit but does 0 damage (and that difference should mean something to me and my combat choices).

If you just dislike the appearance of a "0" value, you could also alter your damage formula to acount for defense or m. defense as a scaling percentage. For example, I use a variation of League of Legend's attack formula so that damage output can never possibly be 0, and their formula is essentially a.atk * (100 / (100 + b.def)).
