Need some help on a few questions I have got

I'm doing an open world dating sim as my first real project and need a bit of help here and there if you know how to do this or can give me any pointers on what to look for please do so, every bit of help is appreciated :) :

I recently started doing the intro to the game and came across a bit of a problem pretty quick: On the menu (that opens when you hit x or escape) there are some things that spoil the rest of the intro for you. So I want to disable going into menus completely for the duration of the intro. Don't worry about the player's inability to save, it is pretty short and at no point is there a spot where you'd really need to save.
I really need a custom UI for things to work and the biggest issue I have right now is that I want to make the menu (that opens when you hit x or escape) into something like a phone screen with apps on it for the different kind of menus and I'm really unsure of how to do things.

Also I want to apologize in advance for my low effort placeholder images:)

This is the screen that should appear when pressing x/escape/numpad0 and there should be apps for saving, inventory, and a menu where you can look up the stats of girls / how far you've come with her (as seen below).

This should all be accessible through clicking on the "app" that you want to launch. And also in the apps you should be able to do everything with just the mouse / have a moveable mouse via keyboard.

And now probably the biggest of all problems with that, I need to be able to edit everything in Editor (so I don't have to make a new png in Photoshop for every combination possible.) So for example in the inventory app (which I have yet to make a placeholder for) it should be the real in game library. And in the Girls app the main screen (of which I also don't have a placeholder yet) should show the girls which you have found and have black placeholders for girls you don't yet know.

Any custom menu or custom UI requires a custom plugin to program them.
There are a lot of plugin writers available, small thinga are often done for free but there are also paid plugins if there is larger work involved (the classified forum becomes visible to you after two or three dozen posts).
But you need to give full specifications including full mock-up screens before anyone can even start to work on something like this.

Thank you very much for the tip with the menu access, it actually fixed 2 issues I had.

And regarding the menu UI, is there any way to work around that? Does it have to be a plugin specifically tailored to me, or is there some plugin that does something like that but is generally available (does not have to be requested by me)? I don't mind if free or paid.

there are existing plugins that change the looks of the engine menues, sometimes even drastically.
The problem is that they can only make ONE look each, and that is usually different to what someone else wants.

You can of course look around to find a plugin whose menu you like, but it will not look like the mockups you provided above.

Think of it the same way you think of cover art if you're not an artist - you might find a picture that you like, but it will only fit your story exactly unless you ordered it for your descriptions.
And there are a lot less plugin writers than artists, so the chances of finding something done similar by accident are rather low.

The only straight up custom menuing plugin I know of for MV is https://archeia.itch.io/luna-engine-mv

Or if you don't have $60, I have a workaround (emphasis on the work portion of that), create a blank map, set the menu button up to run a common event to teleport the player to it (along with possibly changing their graphic to a cursor). Then use http://sumrndm.site/hud-maker/ to position whatever text/variables/graphics in the layout you want. You can even create multiple HUDs, one for each menu screen.
