Day 1 DLC: Don't care. Don't like it don't buy it. I also think you misunderstand how it comes to exist. The people who make Day 1 DLC are people who are finished with their part of the main product. If they weren't working on Day 1 DLC, they would be working on another project or let go entirely. They have to be paid to keep working on the game, and the DLC comes from a different budget than the main game.
On Disc DLC: Don't care. If a DLC that was created under a different budget than the main game gets finished before the game is sent to be printed, its actually better for them to go ahead and put it on the disc. Saves everyone time downloading it.
Preordering: What? I don't even get how this is even an issue.
Steam: Steam is awesome, but its a store, you have to check reviews before you purchase anything off it. You sure as hell don't buy things off of Amazon without checking reviews do you?
Now, there are crappy practices put forward by some game companies. TEN DOLLARS TO GIVE YOUR HORSE ARMOR! TEN DOLLARS FOR GUNS IN A DIFFERENT COLOR!, but it has to do with specifically what it is rather than the stuff you are complaining about.
