I listen to SO damn much game music, but if I had to pick a few standout favorites...
Final Fantasy music is usually good, no argument from me. IV, VI, VII, and VIII have the best OSTs overall, I'd say.
It's odd, but most of the rearranged FF stuff I don't care for that much. The exceptions are the concert renditions - the "Dear Friends" and "Distant Worlds" tours. The 2010 concert in Stockholm, Sweden, produced the absolute best renditions of some personal favorites, such as:
That one really struck me, because I've been wanting a full orchestra version of the Prelude for years and never got one until this!
And speaking of amazing things I hadn't heard before: Dancing Mad, with full orchestra... and choir! Until this iteration, most arrangements of this music omitted the voices entirely, but not this time! The first two minutes and the last two minutes of this are just astonishing. Especially the last two!
muramasa, I agree the Morrowind opening is great, but I have to go with "Dragonborn", the Skyrim variation. Blew me away the first time I heard the whole thing. Skyrim in general is the best Elder Scrolls OST yet, I think.
A lesser known great is Einhander. This game was made in 1998, and now fifteen years later, I still have not heard anything else quite like it. Techno, but moody and intense! Awesome stuff. The track linked below is one of the best boss themes I've ever heard:
And finally, lately I've been stuck on the absolutely masterful soundtrack to the PSP re-release of Tactics Ogre:
